What to look for
Daily rice should cook in under 20 minutes, stay soft without going mushy and pair with anything. A medium-aged basmati is ideal: fragrant, forgiving and good value.
Quick plain chawal
- Rinse and soak 20 to 30 minutes.
- Bring 1.5 cups water per cup of rice to a boil with a pinch of salt.
- Add rice, cover, cook on the lowest heat for 12 to 15 minutes.
- Rest 5 minutes and fluff.
