The short answer
Keep the lid tightly closed, store the jar in a cool, dry place away from sunlight, always use a clean, dry spoon, and make sure the pieces stay covered by oil. Sweet chutneys are best kept in the fridge once opened.
The golden rules
- Use a completely dry spoon. Water is the main reason achaar spoils.
- Push pieces back under the oil after serving.
- Close the lid tightly and wipe the rim.
- Keep it out of sunlight and away from the stove.
- Never put leftover achaar from the plate back in the jar.
