What can you do with leftover achaar oil?

The short answer

Do not throw it away. Achaar oil is already infused with spice. Use it for a tadka on daal, brush it on parathas, toss it with boiled potatoes or chana, add it to marinades, or drizzle a little over raita or chaat.

Ways to use it

  • Daal tadka: heat a spoon of achaar oil, add garlic, pour over daal.
  • Paratha: brush on instead of plain ghee.
  • Chana or aloo chaat: toss with onion, lemon and chaat masala.
  • Marinades: mix with dahi for chicken or fish.
  • Fried eggs: fry them in it.

Keep it clean

Use a dry spoon, and store leftover oil covered. As long as it smells good and shows no mould, it is fine to use.
