The short answer
Lemon achaar (nimbu ka achaar) is whole or quartered lemons cured in salt and spices. It is tangy and only mildly hot. As it ages, the peel softens and the bitterness fades, which is why an older jar often tastes better than a new one.
Why it gets better
Salt slowly breaks down the lemon peel, turning it soft and almost jammy, while the spices soak in. A freshly made jar can taste sharp and slightly bitter; a few weeks later it is rounder and more fragrant.
What to eat it with
