How much water do you need for atta dough?

The short answer

Start with about ½ to ⅔ cup of water per cup of atta, added a little at a time. Chakki atta usually takes a bit more. The dough should be soft and slightly sticky, not stiff.

Adjust as you go

Humid weather needs less water, dry winter air needs more. For paratha, keep the dough slightly firmer so it holds layers.
