The short answer
Knead a soft, slightly sticky dough with lukewarm water, rest it 20 to 30 minutes, roll evenly without too much dry flour, and cook quickly on a hot tawa. Keep finished rotis wrapped in a cloth.
Step by step
- Mix atta with a pinch of salt and lukewarm water, a little at a time.
- Knead 5 to 8 minutes until smooth and soft.
- Cover and rest 20 to 30 minutes.
- Roll evenly, dusting lightly.
- Cook on a hot tawa: flip when bubbles appear, then puff over the flame or press with a cloth.
- Stack in a cloth-lined container.
