The short answer
Store atta in an airtight container in a cool, dry place, and use it within 2 to 3 months, since whole wheat flour contains natural oils that go stale. A few bay leaves in the container are a common way to keep bugs away.
Storage checklist
- Move atta out of the bag into a sealed container.
- Keep it off the floor and away from damp.
- Use a dry scoop.
- Finish the old atta before adding new on top.
Has it gone stale?
A bitter or musty smell means the flour has gone off. Fresh atta smells sweet and wheaty.
